4firm red tomatoes
3/4 ccut, canned corn
1/3 cdiced cucumbers, finely diced
1/2 cchopped ham (like ham salad texture)
2 tspchopped chives
1/4 tspblack pepper
1 1/2 tsphorseradish, prepared
4romaine lettuce leaves, washed & patted dry
How to Make Tomato Salad
- Bring a pot of water to boil. Drop in tomatoes. Leave 30 seconds then immerse in cold water to peel skins off.
- Trim out the tomato core and using a spoon or melon scoop, scoop out interior. (I freeze it for later to add to soup.)
- Turn upside down to drain out juice. Mix rest of ingredients in a bowl.
- Put lettuce leaf into your salad bowl or dish or plate. Put tomato on top. Fill with salad. Serves 4
