This is an adaptable recipe. You could add chopped eggs, peas, or bacon or even change the ham to chicken or tuna! Substantial enough to be lunch, alone!

Ingredients

  • 4
    firm red tomatoes
  • 3/4 c
    cut, canned corn
  • 1/3 c
    diced cucumbers, finely diced
  • 1/2 c
    chopped ham (like ham salad texture)
  • 2 tsp
    chopped chives
  • 1/4 tsp
    black pepper
  • 1/2 c
    mayonnaise
  • 1 1/2 tsp
    horseradish, prepared
  • 4
    romaine lettuce leaves, washed & patted dry

How to Make Tomato Salad

Step-by-Step

  1. Bring a pot of water to boil. Drop in tomatoes. Leave 30 seconds then immerse in cold water to peel skins off.
  2. Trim out the tomato core and using a spoon or melon scoop, scoop out interior. (I freeze it for later to add to soup.)
  3. Turn upside down to drain out juice. Mix rest of ingredients in a bowl.
  4. Put lettuce leaf into your salad bowl or dish or plate. Put tomato on top. Fill with salad. Serves 4
