This is an adaptable recipe. You could add chopped eggs, peas, or bacon or even change the ham to chicken or tuna! Substantial enough to be lunch, alone!

Ingredients

  • 4 - firm red tomatoes
  • 3/4 cup cut, canned corn
  • 1/3 cup diced cucumbers, finely diced
  • 1/2 cup chopped ham (like ham salad texture)
  • 2 teaspoons chopped chives
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1 1/2 teaspoons horseradish, prepared
  • 4 - romaine lettuce leaves, washed & patted dry

How To Make tomato salad

  • Step 1
    Bring a pot of water to boil. Drop in tomatoes. Leave 30 seconds then immerse in cold water to peel skins off.
  • Step 2
    Trim out the tomato core and using a spoon or melon scoop, scoop out interior. (I freeze it for later to add to soup.)
  • Step 3
    Turn upside down to drain out juice. Mix rest of ingredients in a bowl.
  • Step 4
    Put lettuce leaf into your salad bowl or dish or plate. Put tomato on top. Fill with salad. Serves 4
