Ingredients

  • 3 - 4
    medium tomatoes
  • ·
    salt and pepper to taste
  • 1 Tbsp
    peeled and minced ginger
  • 1 small
    chile, (likenthai or jalapeno), stemmed, seeded and minced or to taste
  • 3 Tbsp
    fresh lime juice, or to taste
  • ·
    cilantro, chopped for garnish

How to Make Tomato Salad with Ginger

Step-by-Step

  1. Core the tomatoes, then slice them. Arrange them on a plate and sprinkle with salt and pepper; let sit for about 10 minutes.
  2. Meanwhile, combine the ginger with some more salt and pepper, the chile, and about 3 T of lime juice.
  3. Drain any liquid that has accumulated around the tomatoes, then dress with the ginger-lime mixture. Taste and add more lime juice if necessary, then garnish and serve.
