I love this recipe! you can add all kinds of different vegetables for a different flavor. You can add ingredients to the dressing too!

Ingredients

  • 2 large tomatoes, peeled, seeded and chopped
  • 1 large green bell pepper, seeded and chopped
  • 1 large cucumber, peeled, seeded and chopped
  • 4 medium green onions, cleaned and chopped
  • 1/2 pound fresh mushrooms, cleaned and quartered
  • 1 large avocado, peeled and chopped
  • DRESSING:
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, pressed
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon coarsely cracked pepper
  • 3 tablespoons olive oil, extra virgin
  • 1/4 cup minced fresh parsley or 1 tbsp. dried

How To Make tomato green pepper salad w/avocado

  • Step 1
    Dip tomatoes in boiling water and peel. Deseed and chop tomatoes and green pepper; pieces should be no larger than 1/2 in. Chop the cucumber, green onions and avocado; quarter mushrooms.
  • Step 2
    Mix lemon juice, garlic, salt, pepper and olive oil. Whisk until blended; add parsley.
  • Step 3
    Fold in salad ingredients. Turn into a glass serving bowl. Cover and chill at least 1 hour.
  • Step 4
    For Dressing try changing the parsley for cilantro or basil and maybe change the lemon juice for lime juice.
