I love this recipe! you can add all kinds of different vegetables for a different flavor. You can add ingredients to the dressing too!

Ingredients

  • 2 large
    tomatoes, peeled, seeded and chopped
  • 1 large
    green bell pepper, seeded and chopped
  • 1 large
    cucumber, peeled, seeded and chopped
  • 4 medium
    green onions, cleaned and chopped
  • 1/2 lb
    fresh mushrooms, cleaned and quartered
  • 1 large
    avocado, peeled and chopped
  • DRESSING:

  • 3 Tbsp
    fresh lemon juice
  • 2 clove
    garlic, pressed
  • 1/2 tsp
    sea salt
  • 1/4 tsp
    coarsely cracked pepper
  • 3 Tbsp
    olive oil, extra virgin
  • 1/4 c
    minced fresh parsley or 1 tbsp. dried

How to Make TOMATO GREEN PEPPER SALAD W/AVOCADO

Step-by-Step

  1. Dip tomatoes in boiling water and peel. Deseed and chop tomatoes and green pepper; pieces should be no larger than 1/2 in. Chop the cucumber, green onions and avocado; quarter mushrooms.
  2. Mix lemon juice, garlic, salt, pepper and olive oil. Whisk until blended; add parsley.
  3. Fold in salad ingredients. Turn into a glass serving bowl. Cover and chill at least 1 hour.
  4. For Dressing try changing the parsley for cilantro or basil and maybe change the lemon juice for lime juice.
