Ingredients
- 2 large tomatoes, peeled, seeded and chopped
- 1 large green bell pepper, seeded and chopped
- 1 large cucumber, peeled, seeded and chopped
- 4 medium green onions, cleaned and chopped
- 1/2 pound fresh mushrooms, cleaned and quartered
- 1 large avocado, peeled and chopped
- DRESSING:
- 3 tablespoons fresh lemon juice
- 2 cloves garlic, pressed
- 1/2 teaspoon sea salt
- 1/4 teaspoon coarsely cracked pepper
- 3 tablespoons olive oil, extra virgin
- 1/4 cup minced fresh parsley or 1 tbsp. dried
How To Make tomato green pepper salad w/avocado

Step 1Dip tomatoes in boiling water and peel. Deseed and chop tomatoes and green pepper; pieces should be no larger than 1/2 in. Chop the cucumber, green onions and avocado; quarter mushrooms.

Step 2Mix lemon juice, garlic, salt, pepper and olive oil. Whisk until blended; add parsley.

Step 3Fold in salad ingredients. Turn into a glass serving bowl. Cover and chill at least 1 hour.

Step 4For Dressing try changing the parsley for cilantro or basil and maybe change the lemon juice for lime juice.
