Tomato cucumber salad

This is quick, easy and for those who are watching their calories, fats, cholesterol, this is a friendly dish!!

serves 4-6

  •   4-6
    large plum tomatoes
  •   1
    large cucumber, peeled and seeded
  •   3
    scallions (green onions)
  •   1/2 tsp
  •   2 Tbsp
    olive oil

How To Make

  • 1
    slice the cucumber into half moons or dice it up into small pieces and the add the salt to them. toss and let sit 10 mins. They will "sweat", KEEP THIS WATER!!!

    Dice up the tomatoes and add to the cucumber bowl.

    dice up the scallions and add to the bowl.
  • 4
    Add the olive oil and toss.
  • 5
    At this point you can add whatever else you'd like. Garlic powder, oregano, rosemary, thyme, dill... get the idea? =D
