The manuscript THE FORME of CURRY
was compiled circa 1390 by
"assent& avyssement of ministers of phisick and philosophile" in Richard II's court and contains some 196 examples of medival "cury" and cookery.

Step-By-Step

1Bunch of watercress
21 bulb of fennel, sliced thinly
31 clove of garlic, minced
46-8 scallons minced
54 shallots minced
62 leeks thinly sliced
71/2 teaspoon dried sage
81/2 teaspoon dried borage
or a few fresh leaves
91 sprig of rosemary
102 tablespoons minced fresh parsley
11Basic Vinaigrette Dressing:
1/2 cup oil
1/2 cup vinegar
1/2 Teaspoon salt...mix= makes 1 cup

For SALAD: Add watercress,fennel,garlic,sage, borage,rosemary and parsley to the salad bowl.
Toss with dressing to taste. SERVE
