Ingredients

  • 3 large cucumbers halved seeded and sliced
  • 1 tablespoon kosher salt
  • 1/2 cup sugar
  • 1/2 cup rice wine vinegar
  • 2-3 - red chili or jalapeño peppers seeded and minced
  • 1/4 cup cilantro, fresh chopped
  • 1/2 cup peanuts chopped

How To Make thai cucumber salad

  • Step 1
    Toss the cucumbers with salt in colander, drain for 30 minutes, rinse and pat dry
  • Step 2
    Whisk vinegar and sugar until sugar is dessolved. Add cucumbers, peppers and cilantro. Toss to combine Sprinkle. Chopped peanuts on top before serving
