  • 3 large
    cucumbers halved seeded and sliced
  • 1 Tbsp
    kosher salt
  • 1/2 c
  • 1/2 c
    rice wine vinegar
  • 2-3
    red chili or jalapeño peppers seeded and minced
  • 1/4 c
    cilantro, fresh chopped
  • 1/2 c
    peanuts chopped

How to Make Thai Cucumber Salad


  1. Toss the cucumbers with salt in colander, drain for 30 minutes, rinse and pat dry
  2. Whisk vinegar and sugar until sugar is dessolved.
    Add cucumbers, peppers and cilantro. Toss to combine
    Sprinkle. Chopped peanuts on top before serving
