Love this slaw. If you wish to make it ahead of time keep vegetables, dressing and cheese apart. Your veg will weep a fair amount of fluid, so drain first, then add the dressing and cheese.

Ingredients

  • 1 package 16 oz cole slaw mix
  • 1 can 7 oz can mexican style corn, drained
  • 2 - jalapenos, seeded and minced
  • 1/4 cup chopped cilantro (or parsley if you hate cilantro)
  • 1/2 cup yellow bell pepper, chopped
  • 1 cup ranch salad dressing
  • 1/2 teaspoon cumin
  • 1/2 teaspoon granulated garlic powder
  • 1 - juice of 1 lime
  • 1/2 teaspoon fresh lime zest
  • 1 cup grated cheddar cheese

How To Make texas coleslaw

  • Step 1
    In a large bowl, toss together the coleslaw mix, corn, bell pepper, jalapeno and cilantro.
  • Step 2
    In a separate bowl, stir together the Ranch-style dressing, cumin, garlic powder, lime juice and lime zest.
  • Step 3
    Pour dressing over slaw mixture and toss to coat.
  • Step 4
    Add Cheese and toss well.
  • Step 5
    Serve.
