red onion chopped
green bell pepper chopped
1 bunch
green onions chopped
jalapenos, fresh chopped stems and seeds removed
1 Tbsp
fresh minced garlic
1 pt
cherry tomatoes quartered
8 oz
zesty italian dressing of choice
15 oz
black beans canned and drained
15 oz
blackeyed peas canned and drained ( i prefer frozen and thawed)
1/2 tsp
ground coriander
1 bunch
cilantro, fresh chopped

  • 1In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.
