1Soak the cracked wheat in half the lemon juice until the juice is absorbed, about 30 minutes.
Meantime, prepare the vegetables for the salad, finely chop all the mentioned vegetables and mix the dressing ingredients together (oil and lemon juice, along with the salt). Set aside.
Stir the soaked wheat, with all the salad ingredients in a medium bowl.
Serve chilled or at room temperature.
2alter amount of each ingredient to your liking. EX: less cracked wheat and more cucmbers and tomatoes to the salad. If i run low on parsley i will mix in some extra finely chopped romaine lettuce in the salad in order to have a larger portion.
