Ingredients
- 2 cups chopped kale leaves
- 12 cherry tomatoes, halved
- 1/4 red onion, small dice
- 2 tablespoons pumpkin seeds, toasted
- 1 large sweet potato, peeled and cubed in 1 inch cubes
- olive oil
- salt and pepper
- DRESSING
- 2 tablespoons tamarind paste
- 2 tablespoons grapeseed oil
- 4 tablespoons maple syrup
- 2 teaspoons soy sauce
- 1 clove garlic, minced
- 2 tablespoons Kewpie mayo
- salt and white pepper, to taste
How To Make sweet potato salad with tamarind dressing

Step 1Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and spread the sweet potatoes in a single layer. Drizzle olive oil over the potatoes and season with salt and pepper.

Step 2Roast in the oven for about 30 minutes, turning every 10 minutes.

Step 3For the dressing, mix all the ingredients in a jar and shake well.

Step 4For the pumpkin seeds, place them in a dry pan and roast over the stove until toasted.

Step 5Mix a little dressing into the kale and work it into the kale with your hands and let sit for 20 minutes.

Step 6Once the potatoes are tender remove from the oven and let sit for 10 minutes to cool down a bit.

Step 7Plate the kale, then top with the potatoes, scatter the cherry tomatoes around the plate, and top with the pumpkin seeds.
