Ingredients

  • 2 cups chopped kale leaves
  • 12 cherry tomatoes, halved
  • 1/4 red onion, small dice
  • 2 tablespoons pumpkin seeds, toasted
  • 1 large sweet potato, peeled and cubed in 1 inch cubes
  • olive oil
  • salt and pepper
  • DRESSING
  • 2 tablespoons tamarind paste
  • 2 tablespoons grapeseed oil
  • 4 tablespoons maple syrup
  • 2 teaspoons soy sauce
  • 1 clove garlic, minced
  • 2 tablespoons Kewpie mayo
  • salt and white pepper, to taste

How To Make sweet potato salad with tamarind dressing

  • Step 1
    Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and spread the sweet potatoes in a single layer. Drizzle olive oil over the potatoes and season with salt and pepper.
  • Step 2
    Roast in the oven for about 30 minutes, turning every 10 minutes.
  • Step 3
    For the dressing, mix all the ingredients in a jar and shake well.
  • Step 4
    For the pumpkin seeds, place them in a dry pan and roast over the stove until toasted.
  • Step 5
    Mix a little dressing into the kale and work it into the kale with your hands and let sit for 20 minutes.
  • Step 6
    Once the potatoes are tender remove from the oven and let sit for 10 minutes to cool down a bit.
  • Step 7
    Plate the kale, then top with the potatoes, scatter the cherry tomatoes around the plate, and top with the pumpkin seeds.
  • Step 8
    Drizzle dressing and enjoy.
