  • 2 medium sweet potatoes, cut into cubes
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon garlic powder
  • ASSEMBLY
  • 6 cups mixed greens
  • 1 bartlett pears, peeled and cubed
  • 1 cup cherry tomatoes, sliced in half
  • 1 cup pomegranate seeds
  • 1 cup sliced strawberries
  • 1/4 cup red onion, sliced
  • 4 ounces goat cheese, crumbled
  • MAPLE APPLE CIDER DRESSING
  • 1/4 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • salt and pepper

How To Make sweet potato salad with maple apple cider dressing

  • Step 1
    Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. Place the sweet potatoes on the baking sheet in a single layer. Drizzle with the olive oil and syrup. Sprinkle the seasonings.

    Bake for 30 minutes, tossing halfway through. Let cool.
