- 2 medium sweet potatoes, cut into cubes
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon garlic powder
- ASSEMBLY
- 6 cups mixed greens
- 1 bartlett pears, peeled and cubed
- 1 cup cherry tomatoes, sliced in half
- 1 cup pomegranate seeds
- 1 cup sliced strawberries
- 1/4 cup red onion, sliced
- 4 ounces goat cheese, crumbled
- MAPLE APPLE CIDER DRESSING
- 1/4 cup olive oil
- 3 tablespoons apple cider vinegar
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- salt and pepper
How To Make sweet potato salad with maple apple cider dressing

Step 1Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. Place the sweet potatoes on the baking sheet in a single layer. Drizzle with the olive oil and syrup. Sprinkle the seasonings.

Step 2Bake for 30 minutes, tossing halfway through. Let cool.

Step 3Make the dressing by whisking the ingredients together until and emulsified sauce appears.
