sweet kale salad

I had a Kale salad from a breakfast buffet at the Hale Koa Hotel in Honolulu recently. It was wonderful. I found several somewhat similar recipes on line, and came up with this version as a copycat!

Ingredients For sweet kale salad

  • 4 c
    washed and massaged kale, roughly chopped
  • 1 c
    broccoli matchsticks
  • 8 oz
    mandarin oranges, drained and cut
  • 1/2 c
    dried cranberries (sugar-free if possible)
  • 1/4 c
    pine nuts, pepitas, slivered almonds or chopped walnuts
  • DRESSING
  • 1/4 c
    mayonnaise, lite is good
  • 1 1/2 Tbsp
    milk
  • 1 1/2 Tbsp
    white balsamic, white wine or champagne vinegar
  • 1 Tbsp
    sugar or honey
  • 2 tsp
    poppy seeds
  • 1 or 2 dash
    sea salt or kosher salt, or to taste

How To Make sweet kale salad

    Combine the kale, broccoli sticks, mandarin oranges, cranberries, and nuts/seeds in a large bowl.

    In a smallish bowl or jar, whisk or shake together the mayonnaise, milk, vinegar, sugar, poppy seeds, and salt.

    Pour the dressing over the salad and toss well to thoroughly coat. Let the salad rest for at least 5-10 minutes before serving. Enjoy!

    NOTE: you can use bottled poppy seed dressing instead of making your own, but you may want to thin it down with a little vinegar!
