I had a Kale salad from a breakfast buffet at the Hale Koa Hotel in Honolulu recently. It was wonderful. I found several somewhat similar recipes on line, and came up with this version as a copycat!

prep time 15 Min
cook time
method No-Cook or Other
yield 6-8 serving(s)

Ingredients

  • 4 cups washed and massaged kale, roughly chopped
  • 1 cup broccoli matchsticks
  • 8 ounces mandarin oranges, drained and cut
  • 1/2 cup dried cranberries (sugar-free if possible)
  • 1/4 cup pine nuts, pepitas, slivered almonds or chopped walnuts
  • DRESSING
  • 1/4 cup mayonnaise, lite is good
  • 1 1/2 tablespoons milk
  • 1 1/2 tablespoons white balsamic, white wine or champagne vinegar
  • 1 tablespoon sugar or honey
  • 2 teaspoons poppy seeds
  • 1 or 2 dashes sea salt or kosher salt, or to taste

How To Make sweet kale salad

  • Step 1
Combine the kale, broccoli sticks, mandarin oranges, cranberries, and nuts/seeds in a large bowl.
  • Step 2
In a smallish bowl or jar, whisk or shake together the mayonnaise, milk, vinegar, sugar, poppy seeds, and salt.
  • Step 3
Pour the dressing over the salad and toss well to thoroughly coat. Let the salad rest for at least 5-10 minutes before serving. Enjoy!
  • Step 4
NOTE: you can use bottled poppy seed dressing instead of making your own, but you may want to thin it down with a little vinegar!
