Ingredients
- 2 - yellow squash, sliced thinly
- 2 - zucchini, sliced thinly
- 1 cup celery, chopped fine
- 1 cup red onion, chopped fine
- 1/2 cup green bell pepper, chopped fine
- 1 can cannelini beans, rinsed and drained
- DRESSING
- 3/4 cup sugar
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tablespoons ranch salad dressing mix
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
How To Make sweet and sour squash salad

Step 1Combine all vegetables in large salad bowl.

Step 2Combine dressing ingredients in a bowl and whisk until sugar is dissolved.

Step 3Pour over salad and toss well. Refrigerate 12 hours before serving. Serve with slotted spoon.
