A multi-bean salad with a sweet/sour flavor that's low in calories.

Ingredients

  • 1 can green beans, 16 oz can, drained
  • 1 can yellow wax beans, 16 oz can, drained
  • 1 can kidney beans, drained
  • 1 can 8 oz can chick peas, drained
  • 8 ounces italian green beans, thawed and drained (1/2 bag)
  • 8 ounces frozen peas, thawed and drained (1/2 bag)
  • 1 package frozen pearl onions, thawed and drained
  • 1 cup chopped green pepper
  • 1 cup thinly sliced red onion or vidalia
  • 1 jar 2 oz jar diced pimientos, drained
  • 1 teaspoon minced fresh garlic
  • 3/4 cup white vinegar
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 16 packages sugar substitute or about 1/4 cup sugar to taste

How To Make supreme bean salad

  • Step 1
    Combine first 11 ingredients in a large bowl, set aside.
  • Step 2
    Combine vinegar, oil, salt and pepper in a small sauce pan; bring to a boil. Remove from heat. Stir in sugar substitute or sugar. Pour over vegetables and toss gently. Cover and chill at least 3 hours or overnight, stirring occasionally. Drain before serving.
