summer tomato & basil salad

What's better that fresh summer tomatoes and herbs? Not much! I can easily eat a whole tomato myself; it's easy to increase everything for more servings. I like to add the vinegar and oil right after I slice the tomato so it can absorb their flavor!

Ingredients

  • 1 medium tomato, cored and sliced
  • 2 - fresh basil leaves
  • 1 green onion (spring onion)
  • 1 tablespoon seasoned vinegar (i use salata brand)
  • 1/2 teaspoon olive oil (i used lemon infused, plain is ok, too)
  • salt and pepper, to taste

How To Make summer tomato & basil salad

  • Step 1
    Arrange tomato slices on a plate. Add vinegar and olive oil.
  • Step 2
    Slice spring onion thinly and sprinkle over tomatoes.
  • Step 3
    Slice the basil thinly (chiffonade) and distribute that over the tomato.
  • Step 4
    Add salt and pepper to taste.
