What's better that fresh summer tomatoes and herbs? Not much! I can easily eat a whole tomato myself; it's easy to increase everything for more servings. I like to add the vinegar and oil right after I slice the tomato so it can absorb their flavor!

Ingredients

  • 1 medium
    tomato, cored and sliced
  • 2
    fresh basil leaves
  • 1
    green onion (spring onion)
  • 1 Tbsp
    seasoned vinegar (i use salata brand)
  • 1/2 tsp
    olive oil (i used lemon infused, plain is ok, too)
  • ·
    salt and pepper, to taste

How to Make Summer Tomato & Basil Salad

Step-by-Step

  1. Arrange tomato slices on a plate. Add vinegar and olive oil.
  2. Slice spring onion thinly and sprinkle over tomatoes.
  3. Slice the basil thinly (chiffonade) and distribute that over the tomato.
  4. Add salt and pepper to taste.
