Ingredients
- 2 cups cherry tomatoes, halved
- 4 medium cucmbers, peeled and sliced
- 1 large clove garlic, minced
- 1/2 teaspoon sea salt
- 2 tablespoons balsamic vinegar
- 1 teaspoon fresh lemon juice
- 3 tablespoons fresh basil, chopped
- 1/2 cup extra virgin olive oil
- 1 teaspoon honey
- - fresh ground pepper, to taste
How To Make summer cucumber salad

Step 1Place tomatoes and cucumbers in a large serving bowl. In a blender, combine clove, salt, vinegar, lemon juice, basil, oil and honey. Blend to incorporate. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with more chopped basil if desired. Refrigerate or serve at room temperature. Serves 6.
