my dear friend, Jane, shared this yummy recipe with me and I just had to pass it on.

ears fresh corn
grape tomatoes---2/1 corn to tomato ratio
finely chopped red onion
chopped parsley or cilantro
juice of 1/2 to 1 lime..to taste
salt & pepper to taste
How To Make
peel corn & place in boiling water. boil 5 minutes
Drain and cool in refrigerator.
Cut corn off cob with sharp knife.
Cut up grape tomatoes into about 4 slices each
Combine all ingredients and chill. Taste and adjust seasonings to taste.
