Ingredients

  • 6
    ears fresh corn
  • ·
    grape tomatoes---2/1 corn to tomato ratio
  • 1/2 c
    finely chopped red onion
  • 3/4 c
    chopped parsley or cilantro
  • ·
    juice of 1/2 to 1 lime..to taste
  • ·
    salt & pepper to taste

How to Make Summer Corn Salad

Step-by-Step

  1. peel corn & place in boiling water. boil 5 minutes
  2. Drain and cool in refrigerator.
  3. Cut corn off cob with sharp knife.
  4. Cut up grape tomatoes into about 4 slices each
  5. Combine all ingredients and chill. Taste and adjust seasonings to taste.
