Ingredients

  • 1/2 - medium cucumber
  • 1/4 - small red onion
  • 4 cups baby spinach leaves, washed & patted dry
  • 1/2 pound fresh strawberries, hulled & quartered
  • 1/4 cup sliced almonds, toasted
  • 1 - lemon
  • 2 tablespoons white wine vinegar
  • 1/3 cup sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon poppy seeds

How To Make strawberry spinach salad

  • Step 1
    For dressing, zest lemon to measure 1/2 tsp. Juice lemon to measure 2 tbsp. Combine zest, juice, vinegar, sugar, oil and poppy seeds in small mixing bowl; whisk until well blended.
  • Step 2
    Score cucumber lengthwise; remove seeds using a corer. Slice cucumber and onion in thin slices. Cut cucumber slices in half.
  • Step 3
    Place spinach in large serving bowl. Add cucumber, onion, strawberries and dressing; toss gently. Sprinkle with almonds and serve immediately.
