~ spring time pea salad ~ cassies

I've always loved peas and I love this salad. There are so many ways you can change it to your liking. Sometimes I add chopped boiled egg and tuna too. I made it simple today with what I had available. This makes a great side for Easter.

Ingredients

  • 3 cups frozen peas, thawed and drained - i use smaller peas
  • 1 1/2 cups fresh shredded, colby cheese - or is great with swiss too
  • 1/4 - 1/2 cup red or sweet onion, diced - i use red for color
  • 1/2 cup diced celery
  • 2 - 3 slices crisp bacon, chopped
  • 1 - hard boiled egg, peeled and chopped if desired
  • 3/4 cup mayonnaise
  • 3 teaspoons each - sugar & milk
  • 1 1/2 - 2 teaspoons salad supreme seasoning
  • pepper - to taste

How To Make ~ spring time pea salad ~ cassies

  • Step 1
    In a medium bowl, toss together the peas, onion, celery, cheese and bacon.
  • Step 2
    Mix together the mayonnaise, salad seasoning, pepper, sugar and milk. If too thick, add a little more milk. Taste and add more seasonings if need be.
  • Step 3
    Toss the dressing with pea mixture, until all is coated. Cover and chill until ready to serve. Note* I've also added a little tuna to this many times.
