spring bacon and pea salad

I have been making this salad for spring and summer for a while. I associate it with spring because of the colors of the peas. Bright green! If you would like to slim down this recipe you can substitute Canadian Bacon for the bacon. You could also use Greek yogurt for 1/2 of the mayo. Enjoy

Ingredients

  • 2 cups frozen or fresh peas
  • 1/2 cup bacon, cooked or substitute canadian bacon
  • 1/4 cup scallions
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup mayonnaise

How To Make spring bacon and pea salad

  • Step 1
    Thaw Peas by putting in a Colander rinse with cold water let sit until peas are drained of the water. NO cooking is necessary. If you are using Fresh peas you may want to parboil to soften just a few minutes then rinse with a cold water bath.
  • Step 2
    Cook Bacon according to preferred taste, let cool drain on paper towel then chop to into pieces
  • Step 3
    Add Chopped Scallions, Shredded Cheddar Cheese to bowl along with the Mayo and the Bacon and the Peas refrigerate until time to serve. Refrigerate left overs.
