Warm bacon dressing. There isn't much else to say. The dressing would make lawn trimmings appetizing. This isn't your run of the mill spinach salad. Popeye never had it this good.

Ingredients
- 8 ounces bacon, diced
- 1/2 cup red onions, finely chopped
- 1 teaspoon garlic, minced
- 1/4 teaspoon freshly ground black pepper
- 1 pinch kosher salt
- 1 1/2 tablespoons creole mustard
- 1/4 cup red wine vinegar
- 2 tablespoons sugar
- 1/2 cup dried cherries
- 1/4 cup vegetable oil
- 8 cups fresh spinach, stems removed, washed and dried
- 1 large orange, segmented
- 4 ounces goat cheese, crumbled
How To Make spinach goatcheese salad with warm bacon dressing

Step 1Cook bacon until crisp, transfer to paper towel and reserve 1/4 cup of the bacon fat

Step 2To the fat, add onioins and cook until soft

Step 3Add garlic, pepper and salt and cook for about 1 minute

Step 4Add mustard and vinegar, stirring to deglaze

Step 5Add sugar and stir until dissolved

Step 6Add cherries and stir for 1-2 minutes

Step 7Remove pan from heat, whisk in oil to emulsify, return the bacon to the pan and adjust seasoning

Step 8Toss spinach with warm dressing, divide among 4 plates, arrange orange slices and crumble goat cheese onto salad to serve
