Spinach Goatcheese Salad with Warm Bacon Dressing

Ingredients

8 ozbacon, diced

1/2 cred onions, finely chopped

1 tspgarlic, minced

1/4 tspfreshly ground black pepper

1 pinchkosher salt

1 1/2 Tbspcreole mustard

1/4 cred wine vinegar

2 Tbspsugar
-
1/2 cdried cherries
-
1/4 cvegetable oil
-
8 cfresh spinach, stems removed, washed and dried

1 largeorange, segmented

4 ozgoat cheese, crumbled
How to Make Spinach Goatcheese Salad with Warm Bacon Dressing
- Cook bacon until crisp, transfer to paper towel and reserve 1/4 cup of the bacon fat
- To the fat, add onioins and cook until soft
- Add garlic, pepper and salt and cook for about 1 minute
- Add mustard and vinegar, stirring to deglaze
- Add sugar and stir until dissolved
- Add cherries and stir for 1-2 minutes
- Remove pan from heat, whisk in oil to emulsify, return the bacon to the pan and adjust seasoning
- Toss spinach with warm dressing, divide among 4 plates, arrange orange slices and crumble goat cheese onto salad to serve
