spicy texas pea salad
Trying to replicate the pea salad my son made for Easter. We can't find the original, so came up with this one. Texas twist for my A&M grad!

Ingredients
- 12 ounces frozen peas, thawed
- 1/2 cup finely diced red onion
- 2 tablespoons cilantro, finely chopped
- 1 - 2 tablespoons seeded minced jalapeno
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon ground cumin
- 4 ounces smoked cheddar cheese, diced
- 1/4 cup lite mayonnaise
- 2 teaspoons lemon juice or vinegar
- salt and pepper, to taste
How To Make spicy texas pea salad

Step 1Mix together all but mayonnaise and lemon juice. Stir them in gently and adjust for taste.
