Very good if you like southwestern flavor with lots of different beans with a little bit of a bite. Think you will like. Do not remember where I got recipe.

Ingredients For southwestern bean salad

  • one can
    (16 oz) kidney beans, rinsed and drained
  • 1 can
    (15 oz) black beans, rinsed and drained
  • 1 can
    (15 oz) garbanzo beans rinsed and drained
  • 2
    celery ribs, sliced
  • 1 medium
    red onion, diced
  • 1
    tomato, diced
  • 1 cup
    frozen corn, thawed
  • DRESSING
  • 3/4 cup
    thick and chunky salsa
  • 1/4 cup
    olive oil
  • 1/4 cup
    fresh lime juice
  • 1 1/2 tsp
    chili powder
  • 1 tsp
    salt
  • 1/2 tsp
    ground cumin, red pepper flakes (optional) or to taste

How To Make southwestern bean salad

    In bowl, combine beans, celery, onion, tomatoes and corn.

    In a small bowl combine salsa, oil, lime juice, chili powder, salt and cumin. Add pepper flakes to taste. Mix well, pour over bean mixture and toss to coat. Cover and chill for at least 2 hours. Better chilled over-night.
