Last Friday I picked up snap peas and cabbage at our local farmers' market to prepare this simple and quick slaw. From Epicurious with minor adjustments.

  • SLAW:

  • 1/2 small
    head red cabbage, thinly sliced or coarsely chopped
  • 3/4 c
    head green cabbage, thinly sliced or coarsely chopped
  • 8 oz
    snap peas, trimmed and thinly sliced crosswise
  • 1/4 c
    fresh parsley, chopped
  • 1/4 c
    fresh mint or fresh basil, chopped (i used half of each)

  • 3 Tbsp
    extra virgin olive oil
  • 3 Tbsp
    lemon juice (lime juice may be an interesting twist)
  • 1 tsp
  • ·
    salt and cracked black pepper, to taste

How to Make Snap Pea & Cabbage Slaw


  1. Whisk the VINAIGRETTE ingredients together in a glass prep bowl.
  2. In a non-reactive bowl combine the slaw ingredients. Pour the vinaigrette over the slaw and toss. Cover and chill.
