snap pea & cabbage slaw

Last Friday I picked up snap peas and cabbage at our local farmers' market to prepare this simple and quick slaw. From Epicurious with minor adjustments.

Ingredients
- SLAW:
- 1/2 small head red cabbage, thinly sliced or coarsely chopped
- 3/4 cup head green cabbage, thinly sliced or coarsely chopped
- 8 ounces snap peas, trimmed and thinly sliced crosswise
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint or fresh basil, chopped (i used half of each)
- VINAIGRETTE:
- 3 tablespoons extra virgin olive oil
- 3 tablespoons lemon juice (lime juice may be an interesting twist)
- 1 teaspoon honey
- - salt and cracked black pepper, to taste
How To Make snap pea & cabbage slaw

Step 1Whisk the VINAIGRETTE ingredients together in a glass prep bowl.

Step 2In a non-reactive bowl combine the slaw ingredients. Pour the vinaigrette over the slaw and toss. Cover and chill.
