Last Friday I picked up snap peas and cabbage at our local farmers' market to prepare this simple and quick slaw. From Epicurious with minor adjustments.

Ingredients For snap pea & cabbage slaw
- SLAW:

1/2 smhead red cabbage, thinly sliced or coarsely chopped
-
3/4 chead green cabbage, thinly sliced or coarsely chopped

8 ozsnap peas, trimmed and thinly sliced crosswise
-
1/4 cfresh parsley, chopped
-
1/4 cfresh mint or fresh basil, chopped (i used half of each)
- VINAIGRETTE:
-
3 Tbspextra virgin olive oil
-
3 Tbsplemon juice (lime juice may be an interesting twist)

1 tsphoney
-
salt and cracked black pepper, to taste
How To Make snap pea & cabbage slaw

1Whisk the VINAIGRETTE ingredients together in a glass prep bowl.

2In a non-reactive bowl combine the slaw ingredients. Pour the vinaigrette over the slaw and toss. Cover and chill.
