shrimp salad with corn and black beans
I had this salad at Merrimans in Waimea, HI. It was delicious and this is my attempt to recreate it.

Ingredients
- 1 1/2 tablespoons oil
- 1 pound shrimp
- 2 - ears corn, cut from the cob
- 4 teaspoons ginger root, minced
- 1 tablespoon shallot, minced
- 1/4 cup black beans, rinsed and drained
- 1 tablespoon butter
- 1/2 teaspoon sugar
- 1/2 cup green onions, chopped
- 2 cups mixed greens
- 1 - tomato, cut into wedges
- 2 tablespoons cilantro, chopped
How To Make shrimp salad with corn and black beans

Step 1Heat vegetable oil over medium-high heat. Add shrimp. Saute 2 minutes per side. Transfer to plate.

Step 2Add corn, ginger, garlic, and shallot. Saute 2 minutes. Return shrimp to skillet. Add black beans, butter and sugar. Stir until butter melts. Add onions. Toss well.

Step 3Season with salt and pepper. Divide greens among plates. Spoon shrimp mixture over. Garnish with tomatoes and cilantro.
