shrimp salad with corn and black beans

I had this salad at Merrimans in Waimea, HI. It was delicious and this is my attempt to recreate it.

Ingredients

  • 1 1/2 tablespoons oil
  • 1 pound shrimp
  • 2 - ears corn, cut from the cob
  • 4 teaspoons ginger root, minced
  • 1 tablespoon shallot, minced
  • 1/4 cup black beans, rinsed and drained
  • 1 tablespoon butter
  • 1/2 teaspoon sugar
  • 1/2 cup green onions, chopped
  • 2 cups mixed greens
  • 1 - tomato, cut into wedges
  • 2 tablespoons cilantro, chopped

How To Make shrimp salad with corn and black beans

  • Step 1
    Heat vegetable oil over medium-high heat. Add shrimp. Saute 2 minutes per side. Transfer to plate.
  • Step 2
    Add corn, ginger, garlic, and shallot. Saute 2 minutes. Return shrimp to skillet. Add black beans, butter and sugar. Stir until butter melts. Add onions. Toss well.
  • Step 3
    Season with salt and pepper. Divide greens among plates. Spoon shrimp mixture over. Garnish with tomatoes and cilantro.
