If you like shrimp, you will love this salad...I'm the only shrimp eater in my family, so I get to have it all to myself...lol!!IMO it gets better the longer it sets. My favorite way to eat this is over fresh spinach...yum!

Ingredients

  • 1 1/2 pounds cooked shrimp - cut into bite size pieces
  • Greens - for serving over
  • 1/2 cup celery, chopped fine
  • 1/4 - 1/2 cup sweet onion, chopped fine
  • 1/2 cup peapods, chopped ( optional ) i use fresh tender pods when i have from my garden
  • 1 - 2 - green onions, sliced
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons fresh lemon juice
  • 1 /2 teaspoon old bay seasoning, or to taste
  • 1/2 teaspoon pepper, fresh cracked
  • - salt to taste

How To Make shrimp salad

  • Step 1
    Combine the shrimp, celery, onion, and pea pods in a serving bowl and set aside. In a small bowl combine the mayo, lemon juice, and seasonings. Stir until well blended. Add the mayo mixture to the other ingredients and stir until evenly coated. Cover and refrigerate for about 1 hour before serving. Serve over salad greens.
