My favorite way to eat this is over fresh spinach...yum!
1 1/2 lbcooked shrimp - cut into bite size pieces
Greensfor serving over
1/2 ccelery, chopped fine
1/4 - 1/2 csweet onion, chopped fine
1/2 cpeapods, chopped ( optional ) i use fresh tender pods when i have from my garden
1 - 2green onions, sliced
1 1/2 Tbspfresh lemon juice
1 /2 tspold bay seasoning, or to taste
1/2 tsppepper, fresh cracked
·salt to taste
How to Make Shrimp Salad
- Combine the shrimp, celery, onion, and pea pods in a serving bowl and set aside.
In a small bowl combine the mayo, lemon juice, and seasonings. Stir until well blended.
Add the mayo mixture to the other ingredients and stir until evenly coated.
Cover and refrigerate for about 1 hour before serving.
Serve over salad greens.
