This was a recipe I made for a contest in Quick and Simple masgazine. I won five nice Hamilton Beach Appliances.

Ingredients

diced tomato
1/3 c
diced red onion
1/2 c
chopped cilantro
1 Tbsp
olive oil
1/4 tsp
cumin

jalapeno, finely diced (optional)
12 oz
cooked frozen medium to large shrimp, thawed and drained
1 tsp
salt
4 c
mixed spring greens

How to Make Shrimp and Mango Salsa Salad

Step-by-Step

  • 1Peel and cut mangos into 1/2 inch cubes.
  • 2Mix with tomatoes, onion and cilantro. Add olive oil, cumin, juice from the lime and jalapeno. Fold in shrimp.
  • 3Mix well and adjust taste with salt and pepper. Serve chilled over spring greens.
