shrimp and mango salsa salad

This was a recipe I made for a contest in Quick and Simple masgazine. I won five nice Hamilton Beach Appliances.

Ingredients

  • 1 - mango
  • 1 cup diced tomato
  • 1/3 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1 tablespoon olive oil
  • 1/4 teaspoon cumin
  • 1 - lime
  • 1 - jalapeno, finely diced (optional)
  • 12 ounces cooked frozen medium to large shrimp, thawed and drained
  • 1 teaspoon salt
  • 4 cups mixed spring greens

How To Make shrimp and mango salsa salad

  • Step 1
    Peel and cut mangos into 1/2 inch cubes.
  • Step 2
    Mix with tomatoes, onion and cilantro. Add olive oil, cumin, juice from the lime and jalapeno. Fold in shrimp.
  • Step 3
    Mix well and adjust taste with salt and pepper. Serve chilled over spring greens.
