shrimp and mango salsa salad
This was a recipe I made for a contest in Quick and Simple masgazine. I won five nice Hamilton Beach Appliances.

Ingredients
- 1 - mango
- 1 cup diced tomato
- 1/3 cup diced red onion
- 1/2 cup chopped cilantro
- 1 tablespoon olive oil
- 1/4 teaspoon cumin
- 1 - lime
- 1 - jalapeno, finely diced (optional)
- 12 ounces cooked frozen medium to large shrimp, thawed and drained
- 1 teaspoon salt
- 4 cups mixed spring greens
How To Make shrimp and mango salsa salad

Step 1Peel and cut mangos into 1/2 inch cubes.

Step 2Mix with tomatoes, onion and cilantro. Add olive oil, cumin, juice from the lime and jalapeno. Fold in shrimp.

Step 3Mix well and adjust taste with salt and pepper. Serve chilled over spring greens.
