So tangy and delicious on a hot summer day! This is a great potluck recipe because it has no mayo or other ingredients that will spoil quickly. It is quite ok to substitute frozen peas and corn for the canned.

Ingredients
- SALAD INGREDIENTS:
- 1 can (16 oz) french-style green beans
- 1 can (16 oz) baby sweet peas
- 1 can (16 oz) shoe peg corn (white corn)
- 1 small sweet onion, chopped
- 1 medium green pepper, chopped
- 1/2 cup celery, chopped
- 1 jar (2 oz) pimentos, chopped
- 1/2 can (8 oz) water chestnuts, chopped
- DRESSING:
- 3/4 cup sugar
- 3/4 cup white vinegar
- 1/2 cup neutral oil
- 1 teaspoon kosher salt
- 3/4 teaspoon pepper
How To Make shoe peg relish salad

Step 1Open the three cans and pour into a colander. Set aside to drain well.

Step 2Once drained, place the veggies and all other salad ingredients in a large heatproof bowl. Set aside while you make the hot dressing.

Step 3Make the dressing: Place the dressing ingredients in a small saucepan. Heat to almost boiling, then remove from heat.

Step 4Pour the HOT dressing over the salad ingredients. Mix well. Cover and chill overnight. Drain before serving.
