Ingredients
- 8 ounces pancetta
- 2 cups brussel sprouts shaved with a mandolin
- 1/2 cup chopped pecans
- 1/4 cup dried cranberries
- 1 cup cherry tomatoes
- 1 granny smith apple cut into matchsticks
- your favorite vinaigrette or try my sweet onion champagne vinaigrette with dijon mustard
How To Make shaved brussels sprouts salad

Step 1Cook the Pancetta until crisp. Add the pecans and dried cranberries and cook for 5 minutes. Stir the Pancetta mixture into the shaved Brussels sprouts.

Step 2Halved the cherry tomatoes and stir into the Brussels sprouts. Lastly add the granny smith apple matchsticks. Serve dressed with Vinaigrette.
