This spicy and vinegary salad is a good accompaniment to Korean BBQ meats. Adjust amount of chile powder to suit your own heat tolerance!

Ingredients
- 7 ounces scallions, trimmed
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 2 tablespoons gochugaru (korean red chile powder - see notes)
- 2 teaspoons sesame oil
- 2 tablespoons superfine sugar
- 2 tablespoons apple vinegar (see notes)
- 1 teaspoon salt
- NOTES
- new mexico red chile can be used instead of gochugaru
- rice vinegar or apple cider vinegar can be used for apple vinegar
How To Make scallion salad (pa-jeori)

Step 1Cut scallions into 4 inch pieces. Then cut each piece in half lengthwise. Continue to cut until there are lots of fine strands.

Step 2Place scallion strands into large bowl with rest of ingredients. Mix together well - you can use your fingers - for 3 minutes or so until scallions are softened and completely coated. Serve.
