This spicy and vinegary salad is a good accompaniment to Korean BBQ meats. Adjust amount of chile powder to suit your own heat tolerance!

Ingredients For scallion salad (pa-jeori)

  • 7 oz
    scallions, trimmed
  • 2 Tbsp
    soy sauce
  • 2 clove
    garlic, minced
  • 2 Tbsp
    gochugaru (korean red chile powder - see notes)
  • 2 tsp
    sesame oil
  • 2 Tbsp
    superfine sugar
  • 2 Tbsp
    apple vinegar (see notes)
  • 1 tsp
    salt
  • NOTES
  • new mexico red chile can be used instead of gochugaru
  • rice vinegar or apple cider vinegar can be used for apple vinegar

How To Make scallion salad (pa-jeori)

  • 1
    Cut scallions into 4 inch pieces. Then cut each piece in half lengthwise. Continue to cut until there are lots of fine strands.

    Place scallion strands into large bowl with rest of ingredients. Mix together well - you can use your fingers - for 3 minutes or so until scallions are softened and completely coated. Serve.
