Well, I know this sounds weird, but Grandma loved sauerkraut and made this often. I aquired a taste for ias an adult.

Ingredients

  • 1 pound canned or refrigerated sauerkraut
  • 1 - green onion, finely chopped
  • 1/2 - green bell pepper, finely chopped
  • 1/2 - red bell pepper, finely chopped
  • 1 - stalk celery, finely chopped
  • 1 - carrot, shredded
  • 1/4 cup apple cider vinegar
  • 1/2 cup sugar
  • 1/2 teaspoon each salt and pepper

How To Make sauerkraut salad

  • Step 1
    Drain liquid from sauerkraut and discard 1/2 of it. In a medium bowl combine remaining juice, vinegar, sugar, salt and pepper. Mix until sugar is dissolved.
  • Step 2
    Combine dressing with remaining ingredients. Refrigerate overnight to blend flavors. Serve cold.
