sauerkraut salad
My Momma used to make this several years back. We fell in love with it, since we make our own kraut & grow all the other veggies, except celery. There is no kraut taste in it. We've made it ever since then. If you don't like kraut, give this a try. There is no kraut taste in it.

Ingredients
- 2 1/2 cups *kraut, drain slightly
- 1 small jar pimentos
- 1 - green bell pepper
- 1 bunch green onions (4 or 5)
- 3 - celery (ribs)
- - *i used 3 pints of homemade, by the time i drained the juice.
- DRESSING
- 1 teaspoon celery seeds
- 1 cup sugar
- 1/2 cup water
- 2/3 cup vinegar
- 1/3 cup canola oil

Step 1DRAIN KRAUT. MIX IN WITH CHOPPED ONION, CHOPPED CELERY, CHOPPED PEPPER, & PIMENTOS & SET ASIDE.

Step 2MIX DRESSING INGREDIENTS IN SAUCEPAN & BRING JUST TO A BOIL, SO SUGAR IS DISSOLVED. POUR OVER FIRST MIXTURE WHILE STILL HOT IS FINE, & REFRIGERATE OVERNIGHT. WILL KEEP ALMOST INDEFINATELY.
