Ingredients
- 3 cups potatoes, cooked and sliced
- - oil and vinegar
- 1/4 cup spanish onions, chopped
- 2 cups green beans, cooked and chunked
- 3 - tomatoes, peeled
- 3 - hard boiled eggs, quartered
- - anchovies
- - pitted black olives
- - salad greens
- 14 ounces tuna in water
- - capers
- - minced parsley
How To Make salad nicoise, mom

Step 1While potatoes are still warm, pour 2 T oil and vinegar over them. Add onions and toss. Pour over the beans while hot, cover and cool to room temperature then chill 2 hours. Add dressing as needed. Arrange remaining ingredients around the edge.
