Ingredients

  • 3 cups potatoes, cooked and sliced
  • - oil and vinegar
  • 1/4 cup spanish onions, chopped
  • 2 cups green beans, cooked and chunked
  • 3 - tomatoes, peeled
  • 3 - hard boiled eggs, quartered
  • - anchovies
  • - pitted black olives
  • - salad greens
  • 14 ounces tuna in water
  • - capers
  • - minced parsley

How To Make salad nicoise, mom

  • Step 1
    While potatoes are still warm, pour 2 T oil and vinegar over them. Add onions and toss. Pour over the beans while hot, cover and cool to room temperature then chill 2 hours. Add dressing as needed. Arrange remaining ingredients around the edge.
