Ingredients

  • 4 large tomatoes, chopped
  • 1 pound mozzarella cheese, cubed
  • 1/2 cup jarred roasted red peppers, chopped
  • 8-10 - fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon coarse sea salt
  • - black pepper, freshly ground
  • 1/2 pound salami, sliced thin (optional)
  • 1/2 cup olives, your choice

How To Make roasted red pepper salad

  • Step 1
    Combine tomatoes, cheese, peppers, salami, olives and basil in a large bowl. Mix olive oil with garlic, salt and pepper; drizzle over tomatoe mixture and toss gently.
