Ingredients
- 1 large cauliflower small florets
- extra virgin olive oil
- salt
- 2 small radicchio, cut into chiffonade
- 1/2 bunch chives, chopped
- 1 cup capers, drained and dried
- 1 cup Pecorino cheese, shredded
- LEMON VINAIGRETTE
- 1/3 cup lemon juice
- salt and pepper
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 3/4 cup avocado oil
How To Make roasted cauliflower salad with lemon vinaigrette

Step 1Preheat the oven to 375 degrees F. Add the cauliflower florets to a large bowl. Drizzle in the olive oil and season with salt. Transfer to a lined baking sheet and roast in the oven for 30 minutes.

Step 2Meanwhile, add some olive oil to a saucepan over medium heat, and add the capers and cook until they are crisp,y about 5 minutes. Drain on paper towels.

Step 3To make the vinaigrette, mix all the ingredients and shake well.

Step 4Toss the cauliflower, capers, radicchio, and chives together.

Step 5Place on a plate and top with the cheese. Drizzle the vinaigrette over the salad. Enjoy.
