This is a salad that you can't stop eating. Last year at Christmas my friend Cindy and I spent a week baking our Christmas goodies. I found this recipe in the Costco magazine so we decided to make it together. We changed it up s bit to our liking and added grilled chicken breasts to it.

Ingredients

  • 2 c
    brown rice, prepared according to pkg directions
  • 2 pkg
    prepared salad mixed greens
  • 3 oz
    crumbled feta cheese
  • 1/4 c
    almonds, sliced
  • 1/4 c
    cranraisins
  • 3-4
    grilled chicken breasts
  • DRESSING

  • ·
    juice of one fresh orange
  • 1 Tbsp
    orange zest
  • 3 Tbsp
    lemon juice
  • 1 clove
    garlic, minced
  • 2 Tbsp
    honey
  • 1 Tbsp
    dijon mustard
  • 1/2 c
    olive oil
  • ·
    salt & pepper to taste

How to Make Rice Salad with Sweet Citrus Dressing

Step-by-Step

  1. Prepare rice according to package directions. Add salt to the water. Set aside to cool. Grill chicken on a George Foreman and season. Set aside.
  2. Combine greens, feta, cran-raisins, almonds and toss.
  3. Combine all ingredients for dressing. Assemble plates with salad mixture, rice then chicken. Drizzle dressing over salad and enjoy.
