This is from one of my favorite regional cookbooks, What Can I Bring, by the Junior League of Northern Virginia. A different side dish salad that's easy to prepare.

Ingredients

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 3/4 cup white vinegar
  • 1. 17oz cans petit peas
  • 1. 16oz cans french style green beans
  • 1. 16oz cans shoe peg corn
  • 1. Small jar pimientos, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, finely chopped
  • 1 cup green pepper, chopped
  • 1 cup onion, chopped

How To Make reston veggie salad

  • Step 1
    Boil first 3 ingredients in a small saucepan until sugar dissolves
  • Step 2
    Drain canned vegetables.
  • Step 3
    Combine peas and next 7 ingredients in a large bowl. Pour dressing over salad and chill overnight. Stir before serving.
