This is from one of my favorite regional cookbooks, What Can I Bring, by the Junior League of Northern Virginia. A different side dish salad that's easy to prepare.

Ingredients

  • 1 c
    sugar
  • 1/2 c
    vegetable oil
  • 3/4 c
    white vinegar
  • 1. 17oz can(s)
    petit peas
  • 1. 16oz can(s)
    french style green beans
  • 1. 16oz can(s)
    shoe peg corn
  • 1. Small jar(s)
    pimientos, chopped
  • 1 c
    celery, chopped
  • 1 c
    carrots, finely chopped
  • 1 c
    green pepper, chopped
  • 1 c
    onion, chopped

How to Make Reston Veggie Salad

Step-by-Step

  1. Boil first 3 ingredients in a small saucepan until sugar dissolves
  2. Drain canned vegetables.
  3. Combine peas and next 7 ingredients in a large bowl. Pour dressing over salad and chill overnight. Stir before serving.
