I love salads and as my husband says if my meal doesn't have a leaf of lettuce in it then I am not a happy woman, he is so right...I am always trying new things and I have tons of salad recipes this one just happens to be one of my favs...

fresh spinach leaves
red, yellow & orange bell peppers sliced
handful of brocasprouts
yellow pepper rings
sea salt & fresh ground black pepper each
extra virgin olive oil
How To Make
fresh spinach leaves mixed with romain hearts and a little arugula. Mix all together then start layering with red, yellow and orange bell peppers sliced however you want, carrots, radishes, brocasprouts, olives, tomaotes, pepper rings & dried cranberries... sprinkle garlic goat cheese or Feta crumbles on the top.
Mix together 2 large lemons seeded and squeezed into a large measuring cup. Add a tsp of sea salt, Add fresh ground black pepper,add 1 heaping tablespoon of dijon mustard, 1 tablespoon of honey & Drizzle extra virgin olive oil and whisk until you measure a cup of dressing & blended well.
Serve the dressing on the side with Multi Grain Wasa Crackers and a cold glass of green tea...
NOTE: I like to take fresh fruit like orange slices, cubed cantaloupe, sliced strawberries etc..just makes for a very fresh salad.
