renie's very vegie salad with lemon vinaigrette

I love salads and as my husband says if my meal doesn't have a leaf of lettuce in it then I am not a happy woman, he is so right...I am always trying new things and I have tons of salad recipes this one just happens to be one of my favs...

Ingredients

  • 2 cups fresh spinach leaves
  • 1 cup romain hearts
  • 1/2 cup arugula
  • 1 small red, yellow & orange bell peppers sliced
  • 6 slices radishes
  • 1 small handful of brocasprouts
  • 7 slices yellow pepper rings
  • 1 medium sliced tomato
  • 1/2 cup chick peas
  • 2 large lemons
  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt & fresh ground black pepper each
  • 1/2 cup extra virgin olive oil
  • 6 slices red onion
  • 5 slices green olives
  • 1/2 cup dried cranberries
  • - baby carrots

How To Make renie's very vegie salad with lemon vinaigrette

  • Step 1
    fresh spinach leaves mixed with romain hearts and a little arugula. Mix all together then start layering with red, yellow and orange bell peppers sliced however you want, carrots, radishes, brocasprouts, olives, tomaotes, pepper rings & dried cranberries... sprinkle garlic goat cheese or Feta crumbles on the top.
  • Step 2
    Mix together 2 large lemons seeded and squeezed into a large measuring cup. Add a tsp of sea salt, Add fresh ground black pepper,add 1 heaping tablespoon of dijon mustard, 1 tablespoon of honey & Drizzle extra virgin olive oil and whisk until you measure a cup of dressing & blended well.
  • Step 3
    Serve the dressing on the side with Multi Grain Wasa Crackers and a cold glass of green tea... NOTE: I like to take fresh fruit like orange slices, cubed cantaloupe, sliced strawberries etc..just makes for a very fresh salad. Enjoy:-)
