  • 1 bunch pencil asparagus, woody ends cut off and chop into small dice
  • 1/4 cup chopped red onion
  • 2 tablespoons pine nuts, toasted
  • 1 cup grated Pecorino cheese
  • micro arugula or regular arugula
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 clove garlic, minced
  • salt and pepper

How To Make raw asparagus salad

  • Step 1
    Place the asparagus, red onion, toasted pine nuts, arugula, and cheese in a large bowl.
  • Step 2
    Mix the vinegar, olive oil, garlic, and salt.

    Pour over the salad. Mix well.
