- 1/4 cup chopped red onion
- 2 tablespoons pine nuts, toasted
- 1 cup grated Pecorino cheese
- micro arugula or regular arugula
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 clove garlic, minced
- salt and pepper
