ranch style edamame & corn salad
I just recently had my first taste of edamame and LOVED it! It tasted like lima beans, which is a favorite vegetable (legume?). So, I thought I'd try to make a creamy salad with edamame, corn and Ranch dressing.... three of my favorite flavors. The result is this tasty and creamy salad. I just served it at a family picnic and now it's a family favorite! If you want to take this great flavor a step further, try using bacon ranch dressing and garnish with crumbled bacon. It's really tasty!!

Ingredients
- 2 bags (12 ounces) frozen edamame, cooked as directed
- 1 bag (12 ounces) frozen sweet corn, cooked as directed
- 1/2 cup chopped red onion
- 2/3 cup mini-farfalle or any small pasta, cooked as directed
- 2/3 cup shredded sharp cheese
- 1 bottle (16 ounces) buttermilk ranch dressing

Step 1Mix all ingredients in a medium size bowl.

Step 2Transfer to serving dish, cover and refrigerate at least 2-3 hours or overnight.

Step 3For a different taste, try using bacon ranch dressing and garnish with crumbled bacon! What an awesome combination of flavors!
