quinoa salad
This is my favorite go-to salad for lunch. It's easy to make and has ingredients which are a good source of iron. You can substitute roasted red peppers for the tomatoes if you prefer.

Ingredients
- 1 cup quinoa
- 1 cup halved grape tomatoes
- 1 - zucchini, diced
- 1 can chickpeas, drained
- 1 cup baby spinach
- 5 ounces feta cheese, crumbled
- THE DRESSING
- 1/2 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon italian seasoning
- 2 teaspoons dijon mustard
- 2 cloves garlic, pressed
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
How To Make quinoa salad

Step 1Prepare the dressing. In a mason jar with a tight lid, combine olive oil, vinegar, Italian seasoning, garlic, mustard, salt, and pepper. Set aside.

Step 2Prepare Quinoa according to package directions.

Step 3In a large bowl, combine Quinoa, spinach, zucchini, tomatoes, chickpeas, and feta. Pour dressing over the salad and combine. Can serve at room temperature or let it sit in the refrigerator to let the flavors meld and serve the next day.
