this is such a flexible salad, all of the ingredient measurements can be adjusted to your taste. as well as adding many other ingredients to your taste.

Ingredients For quinoa salad

  • SALAD
  • 1
    finely diced jalapeno
  • 2 md
    colored bell peppers
  • 1 sm
    onion diced
  • 2 can
    tomatoes, canned italian-style and diced
  • 1 can
    black beans
  • 1 can
    whole corn
  • 1 c
    quinoa, cooked according to package directions
  • DRESSING
  • 1/4 c
    olive oil
  • 4 Tbsp
    cumin ground
  • 1/2
    lime or lemon juice
  • 1 tsp
    salt and pepper
  • OPTIONAL INGREDIENTS
  • carrots
  • broccoli
  • green peas
  • cucumbers

How To Make quinoa salad

  • 1
    drain and rinse all canned vegetables. dice all fresh vegetables to approximately the same size as the canned vegetables. In a large bowl, mix all vegetables together.

    In a small bowl, Combine ingredients for the dressing. mix thoroughly. pour over vegetables and combine dressing with the vegetables.

    Chill Salad for approximately 2-4 hour. serve with chips or flour tortillas
