Ingredients
- SALAD
- 1 finely diced jalapeno
- 2 medium colored bell peppers
- 1 small onion diced
- 2 cans tomatoes, canned italian-style and diced
- 1 can black beans
- 1 can whole corn
- 1 cup quinoa, cooked according to package directions
- DRESSING
- 1/4 cup olive oil
- 4 tablespoons cumin ground
- 1/2 lime or lemon juice
- 1 teaspoon salt and pepper
- OPTIONAL INGREDIENTS
- carrots
- broccoli
- green peas
- cucumbers
How To Make quinoa salad

Step 1drain and rinse all canned vegetables. dice all fresh vegetables to approximately the same size as the canned vegetables. In a large bowl, mix all vegetables together.

Step 2In a small bowl, Combine ingredients for the dressing. mix thoroughly. pour over vegetables and combine dressing with the vegetables.

Step 3Chill Salad for approximately 2-4 hour. serve with chips or flour tortillas
