Quinoa salad

I was experimenting with quinoa and just threw all of this together. All my friends ask me to bring this to potlucks and have asked for the recipe.

Ingredients

  •   1 c
    quinoa
  •   2 c
    water
  •   1 large
    zucchini
  •   1 pkg
    fresh sliced mushrooms
  •   1 can(s)
    artichoke hearts
  •   1 jar(s)
    sliced green olives
  •   1 Tbsp
    olive oil, extra virgin
  •   1 Tbsp
    greek seasoning

How To Make

  • 1
    Rinse quinoa well before cooking, then boil in the 2 cups of water for 15 minutes, cover and simmer until all water is absorbed. Refrigerate quinoa.
  • 2
    Dice zucchini, sautee in olive oil and greek seasoning. When zucchini is almost done add artichokes and mushrooms.

    Mix vegetables with quinoa. Drain and add green olives if desired.

    Can be served hot or cold.
