I was experimenting with quinoa and just threw all of this together. All my friends ask me to bring this to potlucks and have asked for the recipe.

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 large zucchini
- 1 package fresh sliced mushrooms
- 1 can artichoke hearts
- 1 jar sliced green olives
- 1 tablespoon olive oil, extra virgin
- 1 tablespoon greek seasoning
How To Make quinoa salad

Step 1Rinse quinoa well before cooking, then boil in the 2 cups of water for 15 minutes, cover and simmer until all water is absorbed. Refrigerate quinoa.

Step 2Dice zucchini, sautee in olive oil and greek seasoning. When zucchini is almost done add artichokes and mushrooms.

Step 3Mix vegetables with quinoa. Drain and add green olives if desired.

Step 4Can be served hot or cold.
