How to Make Quinoa salad
- 1Rinse quinoa well before cooking, then boil in the 2 cups of water for 15 minutes, cover and simmer until all water is absorbed. Refrigerate quinoa.
- 2Dice zucchini, sautee in olive oil and greek seasoning. When zucchini is almost done add artichokes and mushrooms.
- 3Mix vegetables with quinoa. Drain and add green olives if desired.
- 4Can be served hot or cold.
