How to Make Quinoa salad
- Rinse quinoa well before cooking, then boil in the 2 cups of water for 15 minutes, cover and simmer until all water is absorbed. Refrigerate quinoa.
- Dice zucchini, sautee in olive oil and greek seasoning. When zucchini is almost done add artichokes and mushrooms.
- Mix vegetables with quinoa. Drain and add green olives if desired.
- Can be served hot or cold.
