I bought some fresh pitas at our town's indoor market this morning and came up with this version of egg salad.

Ingredients
- 3 large eggs, hard-boiled
- 2 pita breads
- 1 1/2 tablespoons Kewpie mayonnaise
- 5 green olives, chopped
- 5 black olives, chopped (can use Kalamata)
- 1 tablespoon roasted red pepper or pepper rings, chopped
- 2 green onions, minced
- 1/8 teaspoon dried parsley
- 1/8 teaspoon dried oregano
- 1/8 teaspoon minced dried garlic seasoning mixture
- lettuce leaves
How To Make pitas with egg salad

Step 1Chop 3 hard-boiled eggs and place them in a small bowl. Stir in mayonnaise.

Step 2Mince olives, peppers, and onions. Add to egg/mayo mixture. Stir in the dried herbs/garlic.

Step 3Cut both pitas in half and open the pockets. Fill with egg salad and tuck in some lettuce leaves.
