I bought some fresh pitas at our town's indoor market this morning and came up with this version of egg salad.

Ingredients

  • 3 large eggs, hard-boiled
  • 2 pita breads
  • 1 1/2 tablespoons Kewpie mayonnaise
  • 5 green olives, chopped
  • 5 black olives, chopped (can use Kalamata)
  • 1 tablespoon roasted red pepper or pepper rings, chopped
  • 2 green onions, minced
  • 1/8 teaspoon dried parsley
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon minced dried garlic seasoning mixture
  • lettuce leaves

How To Make pitas with egg salad

  • Step 1
    Chop 3 hard-boiled eggs and place them in a small bowl. Stir in mayonnaise.
  • Step 2
    Mince olives, peppers, and onions. Add to egg/mayo mixture. Stir in the dried herbs/garlic.
  • Step 3
    Cut both pitas in half and open the pockets. Fill with egg salad and tuck in some lettuce leaves.
