Ingredients

  • 1 small cabbage, shredded (about 4 cups)
  • 1 large carrot, peeled and shredded (about 1 cup)
  • 1/8 small red cabbage, shredded (about 1/2 cup)
  • 1 cup mayonnaise
  • 1/4 cup heavy cream, or table cream
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/2 cup pineapple tidbits, drained
  • 2 tablespoons raisins

How To Make pineapple coleslaw

  • Step 1
    In a large bowl, combine cabbage, carrots and red cabbage.
  • Step 2
    In a another bowl, combine mayonnaise, heavy cream, vinegar, sugar and salt. Whisk together until smooth and sugar and salt are dissolved.
  • Step 3
    Add mayo dressing to cabbage slaw and gently toss together until well-distributed. Add pineapple and raisins and gently toss to combine. Chill for about 10 to 15 minutes to allow flavors to meld.
