This is a family salad we have enjoyed for many years, especially when lettuce was not available. You will love the clean fresh taste. Enjoy! Photos are my own, and so is this humble recipe.

Ingredients For bonnie's parsley salad

  • 1
    large bunch of washed curly parsley, chopped very fine
  • 3 or 4
    large tomatoes, diced
  • 1
    lemon juiced with some pulp
  • 1
    bunch of slim green onions, chopped fine
  • 1/4
    cup extra virgin olive oil
  • salt to taste

How To Make bonnie's parsley salad

  • 1
    Wash the curly parsley and drain it. Blot with paper towels. Remove the stems. Chop very fine by hand.

    Add the tomatoes, chopped fine.
  • 3
    Add the green onions, chopped fine.
  • 4
    Mix lemon juice, olive oil and salt and pour over the salad, toss to mix thoroughly. Refrigerate overnight to blend flavors. Enjoy!
