This were the croquettes you remember granma and mum cooking for dinner. Later as you grow you realize its the kind of recipe where you can use your leftovers, chicken,meat,ham,fish etc. Its easy to bake and even easier to eat,next to a nice green salad or green beans.
Melt the butter in milk,add yolk of egg and seasoning. Add to potatoes. Add parsley,and leftovers and mix well. Shape the mixture into balls and coat with egg and breadcrumbs. Fry in deep fat. Drain on soft paper and serve either warm or cold.
