This recipe just evolved from an exciting weekend at the finals of the WFC in Vegas ! Created to top my Troical Sun ( fish) sandwich, I decided this was the best part :) I thnk it will go well with just about anything !

  • 1/2 c
  • 2 Tbsp
    fresh pineapple juice
  • 1 pinch
    kosher salt
  • 2/3 c
    finely chopped fresh pineapple
  • 5 c
    cabbage mix, shredded finely or angel hair style
  • 2/3 c
    shredded unsweetened coconut ( but sweetened is fine also)
  • 3 oz
    chopped pecans

How to Make Nutty Pina Colada Slaw


  1. Combine the mayo, juice and salt in a large bowl. Add pineapple, cabbage and coconut.
  2. Stir until all the ingredients are coated in dressing.
  3. Chill for at least 15-20 minutes , then add nuts right before serving.
