Ingredients
- 8 ounces vermicilli noodles
- 1 cup broccoli cut into small florets
- 1 tablespoon sesame oil
- 1 head cabbage cut into thin strips
- 2 large carrots cut into matchsticks
- 1 cucumber cut into chunks
- 1/3 cup cilantro chopped
- 2 teaspoons black and white sesame seeds
- sea weed
- MISO DRESSING
- 2 tablespoons each white miso,honey, & olive oil
- 1 tablespoon rice vinegar , lemon juice
- 1 clove garlic minced
- 1 teaspoon ginger grated
- salt and pepper
How To Make noodle veggie salad with miso dressing

Step 1In a medium saucepan boil some water and add the rice noodles and broccoli and cook about 4 minutes. Drain and run under cold water. Toss with the sesame oil.

Step 2Combine the noodles, broccoli, cabbage, carrots, cucumber and cilantro.

Step 3Mix all the ingredients together for the dressing and mix well. Pour over the salad. Sprinkle with sesame seeds and sea weed.
