This is a sweet and tangy coleslaw that is wonderfully different. It will brighten up your favorite bbq dishes and add a great twist to street tacos. Perfect for serving at picnics, potlucks, and reunions. I hope you give this one a try - I know the jello sounds a little out there, but it is really good.

Ingredients

  • 1 - head of cabbage shredded
  • 1 - red or white onion, minced
  • 1 - poblano pepper, dice
  • 2 cups carrot, shredded
  • 1 - fresh jalapeno, minced (optional)
  • 3 tablespoons cilantro, minced (optional)
  • 3/4 cup vegetable oil
  • FOR DRESSING:
  • 1/3 cup cider vinegar
  • 1/3 cup water
  • 1 cup sugar
  • 1 teaspoon celery seed
  • 1/4 teaspoon mustard seed
  • 1 teaspoon salt
  • 3 oz - orange jello (trust me on this folks)

How To Make my loco orange coleslaw

  • Step 1
    Place veggies in a large bowl. Pour in oil and stir to combine.
  • Step 2
    In a medium sauce pan add all ingredients for dressing except jello. Simmer on medium heat until sugar and salt have dissolved.
  • Step 3
    Turn off heat and add jello. Stir to dissolve. Allow to cool to room temperature.
  • Step 4
    Pour over veggies and stir well to combine. Refrigerate 6 hours or overnight before serving.
